The Humboldt is our first fillet knife, designed in collaboration with TJB ambassador, professional surfer, and avid fisherman Conner Coffin, along with chefs and adventurers whose lives revolve around the water. Crafted to be both endlessly useful and highly durable, the Humboldt features a stonewashed, full-tang Böhler N690 stainless-steel blade, offering exceptional corrosion resistance in any environment. The blade is paired with machined G10 handles, ensuring a secure grip in all conditions—whether you’re wearing gloves or not. Its flex profile, trailing point shape, and razor-sharp edge right out of the box make quick work of rib bones, tough skins, and scales. The Humboldt also comes with a full-length Kydex sheath, so it’s ready to go wherever you do—from surfcasting at beach breaks to your kitchen drawer, and everywhere in between.

The Filet Knife That James Needed
Why would James need a fillet knife? While we focus on modern, minimal everyday-carry, the people of James aren’t limited to just the things that go in your pockets. Conner Coffin has been a part of TJB for many years, and fishing is a core part of Conner’s life. If he’s not surfing, or hanging with his family, he’s fishing. And as such, he needed a fillet knife. We worked hand-in-hand with Conner, as well as professional chef, hunter and renaissance man Connor Gabbot (Conner and Connor!) and world-record-holder spear fisherman Justin Lee to make a fillet knife that fit the needs of the people of James.

Maximal In Its Minimalism
The Humboldt may look simple, but there’s magic in its simplicity. Built around a full-tang Böhler N690 stainless steel blade, it strikes the perfect balance between corrosion resistance, ease of sharpening, and solid edge retention. We worked closely with Conner and the team to fine-tune its flex profile, ensuring it can handle breaking down an entire fish from tip to tail. Aggressive jimping on the blade and a deeply machined grip pattern in the Current® G10 scales provide maximum control—even when your hands are gloved, wet, or slick with fish slime. The Humboldt is as straightforward as it is capable—because when it comes to performance, no detail has been overlooked.



Firm But Flexible
The flex profile of the Humboldt was designed to balance the need for flexibility (to get around ribs and finicky fish parts) and toughness, so that you can count on it day in and day out. Feedback from our team has been that the Humboldt easily moves through things that other filet knives would be stymied by, but we didn’t sacrifice flexibility or grip to make that happen. That’s the magic of full tang, razor-sharp (check it yourself!) Böhler N690 stainless steel and the Humboldt’s proprietary flex pattern and blade profile.
